Poor neglected blog!!

I can't believe it is so long since I wrote in here!  Just a quick update regarding my slimming world journey - I am still in my target range (1.5lbs under target), have been at target for around 18 months now, and I'm a diamond member!!
While I'm here, this was my tea tonight: syn  free meatloaf, broccoli carrots and new potatoes - just two syns for a splash of gravy. Yum yum!
The meatloaf is from the latest slimming world recipe book and contains very lean pork and beef mince, onions, and red peppers. Absolutely delicious! I have made enough to freeze off several portions, so I'm looking forward to more tasty teas :-)

Still here!

I haven't blogged in such a long time! I am still here following slimming world, and still in my target range. Not only that, I am now a Diamond member! Cannot believe I have got this far, staying in target range for a year!

I felt really proud when I was given this award by my slimming world consultant

Must confess, I do have days when I don't make the greatest of food choices, not sure really how I have managed to stay in target-maybe my body has just adjusted to its new weight? My downfall will always be cake and chocolate :-) but, having got this far, I am never going to go back to my old starting weight

On the menu tonight, chicken sausage and pea risotto, delicious and filling, and barely a syn in sight. Here it is, simmering away in the pan

Magic pancakes

It's been ages since I made these. Just seen this photo on a Slimming World friend's post - Time I made some more!
Basically, you mix together 35g of oats and a Mullerlight, and leave overnight in the fridge, or for a few hours if you can't wait. Add two or three beaten eggs to the mixture plus a couple of teaspoons of sweetener, and stir well. Spoon into a frying pan coated with a low calorie spray e.g. fry light and cook both sides. Delicious served with fresh fruit pieces, as Claire has done here :-). They really are absolutely delicious

Taiterash!

Taiterash - a good old northern recipe, from my part of Lancashire!
This is a dish my late mum used to make. I can remember many years ago that we would sit round the dining table as a family thoroughly enjoying a plate of this. Thankfully, she taught me how to make it. I've no doubt many versions of this exist, but this is our family one.
It is really quite a simple meal-stewing steak, kidney, chopped onions, potatoes and carrots. Also, a couple of oxo stock cubes and two bouquet garni sachets.
To make it, I brown the meat and the onions, and then put into the slow cooker with enough water to cover the meat, add the oxo cubes, carrots and the Bouquet Garni, and cook it slowly for several hours. I cook the potatoes separately, having cut them into small pieces. These are added towards the end of the cooking time, when I also thicken the meat juices to a very tasty gravy.
To serve, pickled red cabbage is an absolute must! I hadn't added mine when I took this photo. 
This is very Slimming World friendly as the only syns are in the gravy - and very few too :-)
